A HIGH PROTEIN BREAKFAST

Looking back, a month off the gym was not a good idea, nor was the numerous amount of rich meals i’d indulge in every weekend. So starting today I am officially getting back to my old, fitter self which involved me spending my weekend doing some meal preparation including protein breakfast cookies. Although they may replace your buttery slice of toast you eat while running out the door, or the chocolate muffin you grab from costa as you head into work, they do still taste pretty good and only take 20 minutes to make.

 

To make 48 cookies you will need:
1/2 cup egg white
4 cups oats
3 tsp vanilla extract
1 cup apple sauce
8 scoops protein powder (i use vanilla cookie from my protein)
2 tsp olive oil
1 cup raisins
1/2 cup shredded coconut
1/2 cup ground almonds

Instruction:

Simply mix all the ingredients in a bowl and measure out one tablespoon onto a baking tray and bake for 20 minutes at 160 degrees.
